SWEET POTATO HUMMUS

Ingredients
2 cups cubed roasted sweet potato
1 15 oz can northern beans rinsed and drained
1/2 cup olive oil
1/4 cup tahini
2 tbsp lemon juice
2 cloves garlic
1/2 tsp salt
METHOD
1. Roast sweet potato at 425 F for 30 min on a baking sheet lined with parchment.
2. Add all ingredients to food processor and blend until smooth!
3. Serve and enjoy.
Store in fridge up to 5 days.
